Lemon Coriander Soup | Vegan Recipe | Gluten Free

The refreshing combination of lemon and coriander along makes up a healthy soup that can brighten up the day, anytime! Lemon Coriander soup is full of Vitamin C and is low in calories. This light and nutritious soup is very refreshing.

Lemon is a rich source of Vitamin C that boosts immunity, that helps protects from common infections, and fight free radicals. Lemon also promotes hydration and gives the necessary boost to the metabolism.

Coriander is a wonderful source of dietary fiber, manganese, iron and magnesium as well. It helps in lowering blood cholesterol levels and management of high blood sugar. Vitamin K found in coriander helps in fighting or preventing Alzheimer’s disease.

Ingredients:
  • Lemon Juice – 1 Tablespoon
  • Coriander Leaves, chopped – ¼ Cup
  • Onion, chopped – 1 Small
  • Carrot, chopped – ½ Small
  • Cabbage, grated – ¼ Cup
  • Garlic, grated – 2 Teaspoon
  • Green Chilly, chopped – 1-2 no.
  • Salt – as required
  • Oil – 1 Teaspoon
Method:
  1. Heat oil in a deep pan, to it add garlic, green chilly & sauté for a few minutes.
  2. Add onions & sauté. Then add cabbage, carrots & sauté.
  3. Add 3 cups of water, and bring it to a boil.
  4. Cook all the vegetables until the rawness goes away but are crunchy enough.
  5. Add coriander and lemon juice.
  6. Ready to serve.
