Egg Poha | Healthy Breakfast | Gluten Free Recipe


Poha is a very commonly consumed breakfast in India. It is light, delicious, and healthy breakfast enjoyed by all age groups. Also, it is easy to digest, and contains some amount of iron. It is made in many different forms such as Peanut Poha, Kanda Poha, Potato Poha or Peas Poha, etc. All of these are combinations that add nutrients such as vitamins, minerals and fiber to the Poha recipe.

We have given a twist to this traditional Poha recipe and made rich in protein as well by adding an egg to it. Try out this delicious Egg Poha recipe that has nutrients such as protein, B-complex vitamins, vitamin D and other nutrients that make it a complete meal for breakfast.

Ingredients:
  • Poha (Soaked) – 2 Cups
  • Egg (Whole) – 1-2 Whole
  • Green Peas (Boiled) – ½ Cup
  • Onion (Chopped) – 1 Medium
  • Green chilli (Chopped) – 2 No.
  • Curry Leaves – 1 Twig
  • Mustard Seeds – ½ Teaspoon
  • Cumin Seeds – ½ Teaspoon
  • Turmeric Powder – ¼ Teaspoon
  • Coriander Leaves (Chopped) – 2 Tablespoon
  • Salt – To taste
  • Oil – 2 Teaspoon
Method
  1. In a kadai, heat the oil.
  2. Add mustard seeds and cumin seeds, and wait until it crackles.
  3. Then add the chopped onions, green chilli, and curry leaves.
  4. Cook the onions until they are translucent.
  5. Now add the green peas, and turmeric powder and stir for a while.
  6. Crack the eggs in a bowl and whisk it properly.
  7. Now add it to the above mixture and make a scramble egg.
  8. To this add soaked poha or rice flakes and mix properly.
